Dark Chocolate & Coconut Rock Cookies

Yummy and Healthy...all in one bite!

Dark Chocolate and Coconut Rock Cookies


  • 1 x 200 g Dark Chocolate slab
  • 125 g Desiccated Coconut (no sugar added)
  • 50 g Butter
  • 165 ml Coconut Cream


  • Break the chocolate into small pieces and place it in a double boiler with Coconut Cream (do not let the top pot touch the water in the bottom pot). Keep in the double boiler until the chocolate starts melting. Add butter.
  • Take off the heat and stir until chocolate is completely melted and mixed with cream.
  • Stir until chocolate and butter are melted.
  • Add coconut and stir until all ingredients are mixed.
  • Use small muffin papers and scoop a teaspoon full into each.
  • Place in the fridge to set and serve as Friandise with coffee.
