Tsatsiki

 INGREDIENTS

  • 250 g Full Fat Greek Yoghurt
  • ½ English Cucumber
  • 15 mg Dried Mint
  • 25 g Himalaya salt
  • Pepper to taste

* FOR THE GARLIC LOVERS:
   add 1 finely chopped garlic clove to mixture.

METHOD

  • Remove pips and grate the rest of the Cucumber.
  • Place in a colander and sprinkle with 25 g salt. Allow to stand for 1 hour. Water will drip out of Cucumber, discard water, (or use for a smoothie)
  • Mix Cucumber, Yoghurt, Mint and pepper to form a paste.
  • Adjust seasoning and serve as a dip with Vegetable Sticks, Meatballs or as an accompaniment with Grilled Lamb Chops.
